Spirit Brewery is the house’s taste engine: an AI-assisted factory that discovers, extracts and composes non-alcoholic spirit architectures from plants — agave, gentian, smoked birch, cascara, hoja santa and hundreds more. No ethanol. Sometimes bitter. Sometimes smoky. Always ritual-grade.
Process
Agave hearts, alpine roots, desert herbs, barks, smoke woods, peels, seaweeds — mapped to alcohol-category codes they reimagine.
Pit-roast, toast, cold maceration, vacuum extract, smoke chamber, CO₂ — craft processes, not soft-drink syrup.
Models score bitterness, smoke, tannin, acid, resin and mouthfeel against whisky, tequila, gin, amaro and champagne targets — for NA composition only.
Formulas ship to brand platforms (Oak Zero, Ember Agave…). Each brand keeps culture; the brewery keeps science.

Spirit Brewery combines sensory AI, process automation and plant science to explore combinations humans would take years to trial — then locks winners into brand-ready, food-law-reviewed formulas.
The brewery never ferments to ethanol for product. Plants and process create the hardness: gentian bitterness, mesquite smoke, oak tannin, juniper resin, verjus acid.

Agave example
For tequila-like drinks we study ultra-premium ceramic codes (Clase Azul aesthetic language) and rebuild them as original clay bottles with higher ASP — plus a liquid of roasted agave, damiana, hoja santa and mesquite smoke. Luxury packaging + hard plant taste = non-alcoholic prestige.
